A wonderful vegan Tagine, packed full of flavour. A beautifully aromatic spice mix of cumin, cinnamon, saffron, coriander, garlic and parsley is combined and slowly simmered with zucchini, eggplant, tomatoes, carrots, green peas, green olives and preserved lemon to create this middle eastern style tagine.
It's a lovely fully-flavoured dish that's super-fresh and leaves you feeling satisfied, yet still light.
