1 Cook either our Roast Duck Ravioli, or Slow Cooked Beef Bolognese Agnolotti for 5 minutes (3, if thawed)

2 While that's cooking heat butter in a pan till nutty brown

3 Throw in some sage leaves from the garden till just crispy

4 Pour the butter over the ravioli/agnolotti.

Brought an Apple Crumble home last night. The perfect warming pud for a winter's night. Leave it in the oven long enough so that you can see the butter bubbling away on the topping. Then the crumble starts to caramelise, and becomes beautifully chewy - a perfect complement to the soft, warm apple underneath Add Creme Anglaise, or keep it simple with custard or Pure Vanilla ice cream. Heaven on a plate. (But not for long!)

How lucky are we to live in an area with such great local food producers?

It's truffle season here in the mountains, and we were lucky enough to get some yesterday from Judi at Snowy Mountains Truffles - just enough to play around with. We tossed fresh linguini with egg and butter and then shaved truffle over the top - delicious! We used the rest sandwiched between a beautiful French brie, so that the flavour will infuse through the cheese. The truffle was dug up just that morning by rescue 'truffle-dog' that she's trained. Just tasted the third flavour in our very special Nonie's Gluten-Free Bread range. Fig Orange and Almond. Totally, totally moreish! I've tried for years to find a good GF bread and now we have three - including the Lightly Golden and Seedy Brown (pictured). At last GF'ers can celebrate! Well done Nonie.
