A pungent and full-flavoured spice mix of cumin, cinnamon, saffron, coriander, garlic and parsley is combined and slowly simmered with lean chicken, tomatoes, carrots, green peas, green olives and preserved lemon to create this middle eastern style tagine.
It's a lovely fully flavoured dish that's super-fresh and leaves you feeling satisfied, yet still light.
Ingredients:
Chicken thigh, onion, canned tomatoes, carrots, green peas, chicken stock, green pimento stuffed olives, lemon, olive oil, parsley, coriander, cumin seeds, ginger, cinnamon, garlic, salt, black pepper, chilli, paprika
Heating Instructions:
Microwave: (Dependent upon the individual microwave used.) Pop the lid of the container and place in a microwave. Cook for four minutes on high. Remove and stir. Cook for a further six minutes. Stir again and allow to rest for a few minutes before eating.
Stovetop: Allow the meal to thaw, and then heat in a pot. Bring the sauce gently to the boil, and then simmer on a low heat for five minutes, stirring occasionally.
