The chef has taken great care to let this gently bubble along whilst cooking, so that all the flavours slowly develop into a rich, deep meaty sauce. We've focussed on the flavour rather than pure heat, so for those who like it hot, we'd suggest just adding a dash or two of Tabasco or chilli oil to suit your own tastebuds.
